Welcome to the Ranch
I can't believe it's already March. This year seems to be flying by. I am deep into the second book for the TEXAS RANGER'S SERIES and still waiting to hear if it will be picked up. This story involves a Ranger of Spanish descent. Needless to say getting into character has brought many new Tex Mex meals into our home.
I'm one of those cooks, who may read the recipe, but then tweaks. So it's always interesting when the family asks for it again. They are never sure what the taste will be. I'm also finding ways to use those slivers of pickled jalapeno peppers from the store. Over the weekend, I put them out for condiments on my chili dogs. I think I singed a few eyebrows and burnt a taste bud or two.

Easy Skillet Chili
2 lbs ground beef or ground turkey
1 onion sliced,
1bell pepper ,
1 celery stalk, all sliced and diced thin.
Spices:
1/4 tsp hot chili powder ( to taste)
1/8 tsp red pepper
dash salt
1/4 tsp pepper
pickled Jalapeño slices
dash of Worcestershire sauce 1 teaspoon
dash of Texas Pete 1/2 teaspoon
1 tablespoon of brown sugar
1 can of condensed soup
1 small can of tomato paste
In your pan place the sliced celery, bell pepper and onion. Let the onion caramelize. Then add your ground beef.
As it browns, put in your spices. Remember to spice according to your taste more if you want hotter or a bit less for mild.
When the hamburger is browned, add in the liquid spices. I just can't cook without Worcestershire sauce. Bless you Lea & Perrins.
Then open a can of tomato soup pour in and add to that a can of tomato paste to thicken. Taste, if you need more spice add to desired temperature. This is the point I put in the Jalapeño slices.
I let the mixture cook down and then ten minutes before I take it up, I will put the tablespoon of brown sugar in to counteract the acid of the tomato.
Purchase a bag of Doritos Chips and shredded cheddar cheese. Put the chips on the side and sprinkle with the cheese to melt. Ah something good.
